"Hey You! Food Hoarder!"

So, for some reason, when the weather gets cold, I tend to buy way too much food. Hello, my name is Lisa and I'm a Food Hoarder!
I know when this is happening when I open the freezer door and something falls out and hits me in the head. It happened Saturday. I was knocked in the noggin with a box of frozen chicken nuggets. See it, right there on top, the black "Bell and Evans" box teetering on the edge???
After I came to, I decided that my challenge for the next couple of weeks is to try to use up everything in my freezer before I buy anything else to put in it. Look! I don't even have room for the ice-maker tray! My box of Light Vanilla Ice Cream is taking a nap there!
Oh, and it's not just my freezer, it's the pantry as well. Especially the GF shelf, the one with the half-eaten box of Nut Thins, several different baking mixes, bags of GF oats....
I'm not even brave enough to show you the other cupboards where the boxes of cereal and canned goods are kept!
I have vowed for the next couple of weeks, to only buy perishable items at the store...milk, salad stuff, fresh fruits and veggies...
I started unloading the pantry yesterday. I actually made that box of Gluten-Free Pantry Truffle Brownie Mix. I must say, it was delicious! My family and I gobbled up more than half the pan. So, one box gone...a few inches gained on my backside.
Tonight I'm making Chicken, Broccoli and Rice Casserole, inspired by Jenny. I'm going to substitute a can of Progresso Cream of Mushroom soup and bake it in the oven. We'll see how that goes. That will take a few of the individually frozen chicken tenders out of the huge package we bought at BJ's Warehouse several weeks ago. Slowly, whacking away at the shameless pile of food I have crammed in every crevasse.

Hi Lisa - I don't feel that bad, my cupboard is the same way or worse! I should post some pictures of our food storage on my blog... we have limited storage space, so we compensated by purchasing additional plastic shelves from WalMart!

May I ask where you find Bell & Evans chicken these days? They used to carry it at my local Latham Price Chopper, but despite my complaints I haven't been able to find it there anymore, and it's a favorite. :-(

Thanks for your comment. It's good to know I'm not the only one!

I've been purchasing Bell & Evans at both Price Choppers in Clifton Park. The one on Rt.146 by KMart and also the small Price Chopper at the corner of Rt. 146 and Vischer Ferry Road. They both always seem to have a supply, unless it's on sale, then you have to go on Sunday after the sale flyer comes out! ;)

I have the same problem! I won't show you my cupboards or freezer!! LOL! It is like an addiction...I like to have choices! I am really trying to use up what I have, but then my grocery store goes and puts all the GF mixes & cookies on clearance! ACK! I can't let them sit there at under $2 each!

Hi Kim,

Wow! You are lucky you have such a great grocery store! I hardly ever find sales on GF items in our area! I would be in even more trouble if there were! LOL! Every once in a while I do get coupons for our local Green Grocer store that carries GF items. I definitely take advantage of that!

Hey Jenny!

It came out great! I ended up doing it the same way on the stove top as you did. I threw the cooked rice and broccoli into the pan with the browned chicken and then put in a can of Progresso soup. I also added a little shredded cheese because, well, everything's better with cheese. My family loved it...quick, easy and nutritious! Thanks so much for posting your recipe. Keep 'em coming!

Hmmmm...maybe I should start a freezer-cleaning-out business???

I don't know how many lumps on the head I would survive! I'd have to up my medical benefit package! LOL!
